    Why Chickpea flour?

    My pancake recipe is vegan and gluten-free as always, but it’s also oil-free. Chickpea flour is naturally high in protein and gives you a really incredible fluffy texture. Even if it says chickpea don't be afraid to try it.

    I love using chickpea flour as a pancake base , This is my favourite brand .

    Is chickpea flour gluten free?

    Chickpeas are versatile legumes with a mild, nutty taste, and chickpea flour is typically made from a variety called Bengal grams. This flour, which you can easily make at home, has recently grown in popularity across the world as a gluten-free alternative to wheat flour.

    Can it be considered Keto?

    Roasted chickpeas may be a favorite trendy snack, but they probably won't fit on keto. A ½-cup serving contains nearly 13 g of net carbs. Hummus is a better choice, with around 3 g of net carbs per 2-tbsp serving. If you are looking to make this recipe Keto-friendly sub with almond flour

    Ingredients you need to make the best chickpea flour pancakes

    •  chickpea flour
    •  oat flour, rice flour, OR use all chickpea flour
    • baking powder
    • vanilla extract
    • non-dairy milk, I prefer using almond milk

    Other flour alternatives you can use

    You can certainly opt to use all chickpea flour, but I personally prefer adding a little bit of another flour such as oat flour. Don’t be afraid to try chickpea flour!

    Can you add sweetener to the batter?

    Yes you can, feel free to add few tablespoons of maple or agave syrup.

    Can these pancakes be prepared ahead of time ?

    Yes. They also store really well in the freezer if you’d like to make them in advance or meal prep for your weekday breakfasts. To freeze, layer small parchment paper pieces in between pancakes before freezing, and to enjoy, pop into the toaster to bring back to life! Top with your favorite maple syrup, fresh fruit, or caramelized bananas, and you’ve got yourself a nutritious and healthy breakfast.     Equipment

    • hand whisk

    • non stick pan

    Ingredients
      

    • 1 cup chickpea flour
    • ½ cup oat flour , rice flour OR use all chickpea flour
    • 2 tablespoon baking powder
    • 1 teaspoon  vanilla extract
    • 1 cup  + 2 tbsp non-dairy milk , more as needed

    optional

    • 2 tablespoon  arrowroot starch  or alternative*, helps to bind
    • 1–2  tbs tbsp coconut sugar or maple syrup

    Instructions
     

    • In a large bowl whisk together flours, baking powder, coconut sugar
    • Add vanilla extract and non-dairy milk and mix until smooth. If texture is too thick you can add additional non-dairy milk–it should be spoonable like a traditional pancake batter.
    • Use a nonstick pan on medium heat
    • Using an ice cream scooper pour the batter into the pan, spread into a nice circle (not too thick) and flip after bubbles begin to form and edges are firming up..

      Would water work to replace milk? I've ran out of milk

        Hi, I did not try it with water but I believe it would work, just pay attention to the quantity since this type of flour soaks liquid so fast so you need to have a thick batter result. let me know how it goes!
